Colourful & Natural Jelly Desserts

Agar-agar is actually derived from a Malay word, but it has become quite a universal word for the different strands of seaweeds (Gelidium and Gracilaria) used in the making of translucent look jelly desserts.

With a hot weather most year round, cold jellies are a hit with locals and generally it is a natural white colour solution with the addition of white sugar. As we all like the aroma of pandan leaves, in it goes for flavouring and discarded after a boil when the sugar has dissolved well. It is allowed to set and then kept chilled before serving or even can be served non-chilled as according to personal desire.

At other stages, colouring can be added in but today most people prefer it with a natural range of colour ingredients for health benefits.

喝杯茶吃个包

据说“包子”历史上也称面玺、玉尖面、馒首、肉馒头等等,流传至今已有1800年历史。《事物纪原》记载,诸葛亮南征孟获,在渡泸水时,邪神作祟,按南方习俗,要以“蛮头”(南方少数民族的头)祭神,便下令以麦面裹牛羊猪肉,做如人形以祭,始称馒头,实际上这就是最初的包子。馒头原本是有馅的,后来为了区别,才将无馅的称为“馒头”,有馅的称之为“包子”。

最著名的包子有天津“德聚号”的“狗不理包子”、上海城隍庙“南翔”的“小笼包”、台湾“鼎泰丰”的“灌汤包”。每年五月,香港长洲“抢包山”活动,每个包山挂上了6,000多个印上「平安」的包子。

Down For A Cup Of Tea And Eat A Pau

Paus have been a popular snack food in China with a recorded history of more than 1,800 years. It used to be an 搊ffering food?meant for prayers to deities with the original form sprouting from mantou. Many years down the road, mantou took to the plain version while pau came with a variety of fillings.

We now have the famous Tientsin paus, small Shanghainese paus encased with stock and filling. Taiwan has their own version of a similar pau but comes in a bigger form. Hong Kong has an annual 揚au Festival?in Cheung Chau where a hill of 6,000 paus are stamped with the 揚ing Ann?character. These are assembled together and a mad scramble to reach the top begins yearly in May, just to reach out for the topmost prosperous pau perched on the highest point.

Locally, most dim-sum restaurants are usually packed to burst at the seams during weekends as families gather to savour dim-sum and paus. Steamed Bread In The Making


Bread making is often thought of as being very complicated and definitely an oven is needed in the final procedure. Beautiful aroma from baked bread can envelop a room and this spells a truly bonded family.

听过发糕的来历吗?传说以前有一位农家小媳妇在拌粉蒸糕时不小心碰翻了一碗酒糟,由于担心遭到公婆责骂,硬着头皮把沾了酒糟的粉浆蒸熟。谁知由于酒糟的发酵作用,这一笼糕蒸得特别松软可口,发糕就此流传开来。

發糕又叫發粿,是中国南方的潮汕、福建、海陆丰及台湾传统民俗过年的糕点。古代即流传过年吃发糕以求好兆头,这种风俗随着当时南来的祖先被带到本地并广为流传。

Fatt Koh: A Natural Heritage
Do you know the story of how fatt koh was born. According to folklore, a housewife accidentally spilled a bowl of wine residue onto her tray of batter meant for kuih. She had no choice but to steamed it as it would displease her in-laws with wastage. But the kuih came out all fluffy and nice. Fatt Koh was brought forth by mistake.

This kind of sweet rice cakes are more popular in southern China like the Teochew area, Fujian, certain clan of Hakkas, most Taiwanese and others. In the olden days, it was of good significance to eat fatt koh during the Lunar year. Traditionally, they are good symbolic food as altar table offerings.

After a good proof, you need strong heat to swell up the rice cakes so a well-risen cake should have a characteristic crack at the surface with a few segments giving out their smiley faces. As the word “fatt” rhymes with the pun of “being prosperous”, it should go down well with most Chinese people.
