Preface There is nothing quite fulfilling as indulging into a sweet dessert at the end of a meal. In this cake baking book, I have included recipes for some of the most sought-after cakes that you can find in bakeries and cafes. Some of the recipes are quick and easy, but some require more preparation. Nevertheless, the most important thing to remember is to always use the freshest ingredients. Chocolates used have to be of good quality to get the smooth and creamy texture. Chocolate must always be kept in a cool dry place and NOT refrigerated. Do look at the step-by-step photos included and read all instructions before starting any recipe.
To complete this book is no easy task. For this I would like to thank Richard and Catherine for the photo shooting and publishing of the book. I would also like to thank my mentors, Catherine Lau and Chef Kam for their time and energy in helping with the decorations and kinds. Very detailed explaination escpecially with lots of pictures. Have not really start using the book but have a litte comment on the instructions ..........
each step in chinese and english at the bottom, in my opinion, is a bit confused when I was reading it. I would prefer chinese notes are together and the english version is grouping together.

Hi, may I know normally how long we can keep the cake?
Cakes can be kept for five days in a proper place like fridge.
Hi I have bought the book. Thumbs up! Its really detailed. However I got a questions here. As majority of your recipes is meant for a 9inch cake. If I want to make a smaller cake say ard 20cm , how do i know how much each ingredients should it be reduced to. Thanks for your time.

Please do not reduce any ingredient, otherwise you may not get a good result. To make a smaller cake, please pour the left over batter into another smaller mould to bake a smaller cake.

Did you use the correct mould? You can try to bake with a smaller mould.
I have you Vol 15 Recipe book! Tried the durian cheesecake.. and it was fabolous and a hit! :) Anyway, as i'm in australia now.. i can't seem to find high ratio flour or superfine flour. I was wondering can it be subsitute with cake flour or any other flour? and also there's no double action baking powder.. can i just use baking powder? what effect would it have if i jus use normal baking powder?
Hi there. My mom purchased your vol 15 recipe book from spore. I'm currently in Australia now, i can't seem to find superfine flour or high ratio flour. Could it be subsititue with cake flour? And for double action baking powder can i just use normal baking powder instead? Would the effect be different for the cake? i'm refering to the cheesy cheesecake. Pls advice :)
High ratio flour or superfine flour can be substitute with cake flour or solftasilk flour.
If double action baking powder is unavailable, normal baking powder can be use.

Ans: If you have followed steps no.(1) & no.(2) correctly, it could be caused by step no.(3) - you may have combine part A & part B too long till the batter turned watery. Or at step no.(4), when remove from oven, the cake was not turn upside-down immediately, till it was cooled.

Hi I am hoping to make the Durian Cream Cake and would like to know if I can replace the gelatine with the same amount of agar agar powder? This is so that my sisters who are vegetarian can also enjoy the cake. Also for decoration, may I know if I can replace Croquant rice with nuts?

Gelatine is a different substance from agar-agar powder, there is nothing to be substitute with.
For decoration, you can replace Croquant rice with nuts.
My family only have 4 memebers, if I just wanted to bake 500g cake. How much or how many % should I reduce on each ingredients? How nice if Y3K can print a cookbook for small family.
can I use the yeast to replace baking powder and baking soda? 1g of baking powder or baking soda = to how many g of yeast?
We do not recommend any alteration to these recipes. You may share any extras with your friends if you can't finish it.
Yeast cannot be replace with baking powder & baking soda.

I bought this book and noticed that most recipes do not state the weight or grade of eggs used. If those recipes never stated the weight or grade of eggs, is it standard that I should be using grade B eggs? Appreciate your advise with many thanks.
