月饼的市场比起从前有过之而无不及,随着消费者的要求越来越高,以及市场上的竞争越来越激烈,许多商家不但在外形及包装上求变求新,馅料的多样化更让人大开眼界。我们这次找来馅料专家“友爱”配合,在全国各地都有多种高素质馅料供应,让打算自己动手做月饼的读者省却炒馅料的麻烦。
这个中秋节,让我们花点心思做月饼,不论是送礼或者自家享用都特别有意义。

The Mid-Autumn Festival or known as the Mooncakes Festival is a time for jollity as the highlight concerns the mooncakes. In the bygone era, families would purchase these sweet stuffed pastries from restaurants or biscuit manufacturers. But today, certain changes have crept into the taste, ingredients and production of mooncake making.
It is no more a closely guarded secret as Chef Alan Ooi teaches readers the art of making mooncakes. Times have changed and readers can swing along with the trend to try innovative recipes of making mooncakes.

Hi Hi! I am a great fan of your y3k books. I've got the mooncakes and the layer cakes books. I would like to check with you where can I get the mooncake presser with interchangeable plates that is shown in your book? Can it be found in JB's Ng Ming Huat? I live in Singapore and may make a trip to get that gadget. Thanks in advance! :)

Thank you for your support. Most of the ingredient shops (including Ng Ming Huat) published in Y3K series of cookbook carry the moulds used in our cookbooks. It's better for you to call them to confirm if the stocks are available before you go. Their contact numbers are printed in the book.

I truly enjoy this book so much - "Mooncake", have tried out some of it & was really good.
My question, recipe 22, "soochow" mooncake, the butter oil req for water dough, is it refer to "Ghee" or pastry margarine or something else, can't figure out what's this

Thank you for your support.
Butter oil is an artificial butter which is available at most of the ingredients shops. It is harder than butter, the finished baking products will be more crispy in texture and more fragrant. It looks more solid compared to those using butter.
You can substitute it with butter if unavailable.
For the Minnie mooncake, ordinary (all purpose flour) is used to dust the mould.

Hi! I had bought this recipe book. May I know the flour for Pingpi Mooncakes, is it can buy from the shop or need to process the normal flour then only get the Pingpi flour? If really need to process it can I have the recepi how to process it?
Commercial Koh Fun (ingredient of skin for Pingpi mooncakes) is available at most of the ingredient shops listed in pages 8-9 of the Y3K cookbooks Vol. 11 - 'Mooncakes'. Not recommend to do it yourself as the texture will not be the same as ready made ones.
Hi, i am from Singapore.I am just wondering if i can add flavorings to the lotus paste, such as rose syrup. If yes, how much should i add, so that it will not affect the texture. Thanks
Hi Ivy,
You can add any flavouring into lotus paste as desire. Amount of flavouring adding into it depends on how strong you want the flavour to be, normally between 1 tsp - 1 tbsp of flavouring can be added into 1kg of lotus paste.
Hi, thanks for your reply. Btw, for the traditional mooncake skin and snow skin, if i were to cut down on the icing sugar, will it affect the texture of the skin?

You can reduce the sugar of mooncake skin, but the texture will be harder, crack easily and turn bad easily.

I tried making the yam paste, following the full recipe on Taro Flaky Mooncake. But the paste seems quite dry. Is it normal? Or because i fried too long? Anyway to improve the texture?

Pingpi mooncakes cannot be sliced immediately, it should be kept in the fridge for at least one hour to cool before slicing.
Pingpi mooncake is soft in texture to obtain a beautiful solid design.

This recipe's taro filling is drier compare to normal taro filling, because the mooncake is baked instead of deep-fried, to avoid the filling from expanding too much when baking. If you want the filling to be moist, you can add extra 20ml oil into it.

hi, i love your book, i order all of those books , now i want to try to make ice cream mooncake, but i do not know when i fill in ice cream mixture into mold, how can i take it out when it cool, show me how , or i have to put my mold into freezer first, let me know asps , please thank you.

To remove it, use a sharp knife to scrape from the sides.
