我之所以对面包、饼干及蛋糕这三大类烘焙产品能够掌握的那么好,那是对这个行业的热爱所致。记得十四岁那年离开霹雳州的班台,到南部柔佛州新山工作,第一份工作就在西饼店。每天与面粉为伍,嗅到的是面包、饼干及蛋糕刚由烘炉烤出来的香味,百嗅不厌,反而越嗅越喜欢,结果与烘焙业结下这不解之缘。
在从事烘焙事业14年以来,我对这三大烘焙不断研究及尝试、与同业交流及到海外考察,同时在教课时学生所给予的回馈都是让我不断进步的因素。2006年5月与Y3K配合出版的《面包新浪潮》是我事业另一里程碑,在谢宋美老师的细心审核之下食谱达到完全正确无误,获得异常热烈的反应。在一场烘焙示范会,其中一个读者告诉我:「我的印尼女佣已经将食谱内的面包做完,非常容易做,又好吃!」
《过年饼》这本饼干食谱是我累积十四年的心得,六十多种花巧造型、制做容易及多种口味的饼干,相信能够为你带来欢乐!

I just love the spirit of baking and as I put the
finishing touches on this issue of New Year Cookies?
I realized my passion for baking started 14 years ago
as a baker boy from Johor Baru.
It is a true labour of love and with my baking flair, I have concocted countless recipes for bread making, cookies and cakes. My previous book, 揃read Magic?was a hit and I have to thank Catherine Chia for her inspirations. As according to a reader, even her Indonesian maid could bake every recipe from that print.
Follow my well-floured footsteps, simple cookies can be quality cookies baked from home.

Hoen Kwe flour is also known as Indonesian Green Peas Flour(印尼绿豆粉), packed in bars. It is available at most of the supermarkets and baking ingredient shops.

I made Coconut Crisp (PG21) today but my cookies turn out to be chewy. The photo show coconut crisp to be bake until light brown, but mine turn black easily at the side
Can you enlighten me how to achieve this light brown cookies?

Also, who should I hand the egg white ? Should I beat it first or just add into (butter n icing) in stream line?

Tried the recipe for Coconut Crisp
When bake my cookie turn black easily at the side.
Can u enlighten me how to achieve this cookie. Also what is the correct method of handling the egg whit for this recipe?

Hi Simonne,
Different type of oven, electrical powder in different place will make a difference in baking temperature, even though the meter reading is the same.
You can lower down the temperature of your oven to 120-130 degrees to avoid this problem.
Beat butter and sugar till fluffy, add in egg white till all three ingredients combined together. Do not beat egg white in advance.

Hi there, I would like to try on lucky tangerine cookies but wonder where can I find the ingredient for the stalk? (the brown stalks)
There is no suji flour in Suji /Ghee Cookies recipe, how much pln flour can be replaced with suji flour ? The methods of mixing the ingredients in all the recipes are not very clear, when combine does it mean creaming fat and sugar and combine means cut fat into flour ?
